Tropical Salad


  • 1 large grapefruit, chopped into pieces
  • 1/2 lb cooked shrimp
  • 2 avocados, chopped into pieces
  • Romaine lettuce

Quantities are suggestions. Feel free to adjust to what you like.

Serve on a bed of romaine lettuce with a simple vinaigrette:

  • 1/4 c olive oil
  • 1/4 c white wine or champagne vinegar
  • 1/2 tsp dijon mustard
  • Salt and pepper
  • Tarragon, cilantro or herbs of your choice (optional)
